Wanted something different to cook for dinner for my hubby and children. Came up with this and they LOVED it. For all the working parents, it's a quick go to if you're running behind and wanna get a hot meal on the table. Plus it gets in a serving each of fruit and vegetables.

Ingredients

  1. 1 packagesPork Strips (used for stir fry)
  2. 1/4 cupLow Sodium Soy Sauce
  3. 1/4 cupLight Brown Sugar
  4. 2 cup100% Pineapple Juice
  5. 1 canCubed/Crushed Pineapple
  6. 1/3 cupMaraschino Cherries (optional)
  7. 1/2 cupSlivered Sweet Orange Peppers
  8. 1/2 cupSlivered Sweet Red Peppers
  9. 2 cupCooked Jasmine Rice (According to Package)

Cooking Instructions

    Marinate Pork strips with the first three ingredients (Sugar, Soy sauce and Pineapple Juice) overnight in refrigerator . If you're not able to marinate overnight, give the meat at least 4 hours to sit in juices.

    Cut up your peppers in slivers. Add a little olive oil to saute pan. Just enough to cook off peppers. Saute on low for about 7 minutes.

    Add pineapples. IF YOU'RE USING CRUSHED PINEAPPLES, SAVE THIS STEP FOR LAST. Cook the pineapples with peppers for another 4 minutes. Remove from pan and set aside.

    At this time start preparing your Jasmine rice according to the package.

    Add meat to your pan. Cook until fully cooked. Add veggies, pineapples and maraschino cherries to pan. Just reheat until all ingredients are hot and steamy.

    Cup out Jasmine Rice and place stir fry atop rice.
