A family fav! Can also substitute chicken (bone-in or boneless).
Steps

Preheat oven to 375. Prepare a small to medium baking dish and lightly spray with cooking spray. Also, heat oil in frying pan over medium high heat.

Sprinkle 4 pork chops (boneless or bone-in) with salt and pepper to taste.

Whisk mustard, maple syrup, rice vinegar, and rosemary together. Set aside for later.

Add seasoned pork chops to hot oil and brown 2 minutes on each side. Do not cook through as they will finish cooking in the oven.

Place partially cooked chops in baking dish. Pour mustard mixture over chops.

Bake 15-20 min. or until internal temp reaches 145 degrees. (Will likely need additional time for bone-in meats. Watch carefully - Pork cooks fast!)

(OPTIONAL) Add desired amount of fried onion on top and bake an additional 2-3 minutes or until crispy.

Sauce will be thin immediately out of the oven. Let stand 5 minutes and stir if needed - will thicken upon standing.

Serve with potatoes & vegetable
