Matcha Green Tea Shaved Ice with Cute Mochi Balls

It's boiling hot outside! So I created a chilled dessert that'll cool me from within.
If you mix the dry ingredients all together, the mochi balls will become stiff, so add water to adjust the texture. If you plan to shape the mochi balls into characters, it's best if the dough is slightly on the softer side. Shape the dough on a sheet of parchment paper, then drop it into a pot of boiling water. Cooking Instructions
- 1
Prepare the matcha shaved ice. Combine the sifted matcha with the sugar.
- 2
Add the hot water to dissolve.
- 3
In a separate bowl, add the rest of the sugar to the water, and heat. Once it comes to a boil, remove from heat, and chill. This is the simple syrup.
- 4
Gradually add Step 3 into 2 to dilute. Stir well, pour into a tray, and freeze.
- 5
Once it is half-frozen, stir it up with a fork to flake, and return back into the freezer. Repeat this several times for the shaved ice.
- 6
Make the raccoon mochi balls. Combine the shiratamako with water, and knead well to form the mochi dough. Separate two portions out and sprinkle with cocoa powder and another left plain.
- 7
Add the hojicha powder to the remaining dough and divide into 18 portions.
- 8
Take a small portion of the hojicha dough for the ears, and roll the rest into flattened circles. Roll tiny balls and stick on the top of the head to form ears.
- 9
Use the cocoa and plain dough to form the eyes.
- 10
Stick on the nose.
- 11
Drop the formed mochi balls into a pot of boiling water. Once they've risen to the surface, cook for another 2 minutes.
- 12
Transfer to a bowl of cold water.

Soft Mochi Ice Cream Soft Mochi Ice Cream
I created this recipe while I was in the middle of making Yukimi Daifuku-like ice cream. I asked a friend to taste it, and she gave me the thumbs up, so I decided to upload the recipe. If it's completely frozen, the ice-cold mochi melts in your mouth. If it's partially frozen, the mochi and bean paste ice cream come together in perfect harmony. If it's melted, it's basically mochi coated with bean paste cream, which is also great.Tip: Try to roll out the dough thinly in Step 7. Try as hard as you can not to expose it to air while it's freezing. Recipe by Jun13 cookpad.japan -

Matcha Warabi Mochi with Matcha Matcha Warabi Mochi with Matcha
I love user "Rurina"'s recipe for warabi mochiand have always been making it since. It's a delicious brown sugar syrup warabi mochi and I highly recommend it. My recipe uses matcha for an easy green tea warabi mochi. The recipe calls for matcha (powdered green tea), but it's not bitter so perhaps it'll be suitable for small children who don't like its bitterness. Creamy Chocolate Mochi Dumplings Creamy Chocolate Mochi Dumplings
I made these for New Years, and everyone from the kids to my elderly grandparents loved them. These are great because they can be made whenever you feel like it, without taking much time, and can be made simply in the microwave. I think these would be really welcomed by the elderly as a Valentine's Day gift. The mochi dough is on the soft side, so if it's hard to handle, leave to cool down for 1-2 minutes. The dumplings should be on the small side, for a better flavor and texture balance. In step 3, you can blend the filling ingredients in a food processor. Please adjust the microwave time depending on your microwave oven. For 11-13 portions. Recipe by miyuki12 cookpad.japan -
