Firstly cut and wash bitter gourd in a salt water until it reduces bitterness..

In a pan add some peanuts & roast it. Next add sesame seeds roast it for 3 mins in a low flame & off the flame

Take a mixi jar add roasted peanuts, sesame seeds, and grind it fine paste add little water

In a kadai or pan add 2-3 tbsp oil let it heat. Then add bay leaves (3) mustard & cumin seeds, let it fry for 1 min then add chopped onions, curry leaves,let onions cook then add turmeric powder, ginger garlic paste, fry it.

Now add peanut &sesame paste to it, then add enough tamarind water, and some normal water to boil after 3-4 mins of boil add bitter gourd and mix it

Add salt & red chilli powder mix it. Let it cook until it thickens like gravy consistency.. (upto 20-25 mins) in a medium flame

Once it's cooked add coriander leaves and off the flame.. serve it with hot rice... Yummy bitterguord curry is ready 😋
