It's a Gujarati recipe, it's healthy and tasty as well.
Steps

In a bowl, mix gram flour, Turmeric, grated ginger, garlic paste, and salt.

After mixing dry ingredients, add water to the mixture and make a thick batter with pouring consistency.

Add baking powder and baking soda and pour vinegar on that.
The vinegar activates the soda and baking powder, then mix it properly. - 4
Transfer it to another utensil, and sprinkle some Kasturi methi.

Take a steamer, add some water and steam it. 5 minutes on high flame and 10 minutes on low to medium flame. Check it with a help of a knife. If the Dhokla properly steamed then surely the knife comes out clean. Give 5 minutes rest and de-mold the Dhokla.

In a pan heat the oil, add mustard seed and curry leaves, then add green chilies and fry it, then, at last, add water and sugar and let it come to a boil and it's ready. Add the tadka to your Dhokla and enjoy.
