Parlor's Fruit Sandwich ♡

This is a fruit sandwich that I can't help but eat when I go to a bakery or old-fashioned cafe. The salted butter and yogurt gives it depth of flavor, but not too much, making a great fruit sandwich.

Ingredients

2 servings
  1. 4 sliceSliced sandwich bread
  2. 1Your favorite fruits
  3. 1Salted butter (to spread on the bread)
  4. Cream for filling in the gaps
  5. 100 gramsHeavy cream
  6. 40 gramsYogurt
  7. 2 tbspSugar

Steps

    Cut the fruit and pat with paper towel to remove excess liquid. If you're worried about the color changing, sprinkle with a little lemon juice.

    Whisk the heavy cream and sugar until thick. Add the yogurt and whisk until soft peak stage.

    Spread melted butter on one side of the 4 slices of bread! It's easier to spread if melted.

    Spread the cream on top of the butter.

  5. 5

    Arrange the cut fruit on the bread while keeping in mind how you will be cutting the bread. This time, I used peaches, kiwi and canned mikan oranges.

    Top the fruit with the other slices of bread. Lightly press down and wrap tightly with cling film.

    Chill in the refrigerator until the entire sandwich is set. This takes about 1 hour.

    Cut the sandwich into your desired shape. It's easier to cut with a heated knife.
