One Pot Bisi Bele Bath

Bisi Bele Bath is popular, traditional and flavorful one-pot recipe of Karnataka. Bisi Bele Bath translates to hot lentil rice dish. As the name suggests it is served piping hot with ghee.
Bisi Bele Bath is delicious recipe made with rice, dal, vegetables & special spice powder known as Bisi Bele Bath powder. Tamarind, jaggery, dry coconut, ghee and seasoning adds flavors to the dish. So it is one-pot dish with nutrients, protein and carbohydrate.
It is prepared in 2 stage. First, rice and dal are pressure cooked. Second, vegetables are cooked along with other ingredients and then cooked rice and dal is added and finally seasoned.
It is usually prepared for breakfast or lunch or packed in tiffin box. Best served hot topped with ghee and along with Boondi Mixture and potato chips.

In a pressure cooker bowl take both rice and toor dal. Wash well and soak in water for 30 minutes to 1 hour. Add 2&1/2 cups water, 1/2 tsp ghee, turmeric powder and pressure cook for 2-3 whistles. (Rice and dal should not be mushy, as we will be cooking it again with vegetables. So water and number of whistles should be varied according to quality of rice and dal you are using.)

In a large pan take 3 cups of water and let it boil. Add chopped carrots, beans, potatoes and let it cook for 2 minutes. Then add cauliflower florets, green peas, pearl onions and cook further for 2 minutes. (Add vegetable according to their cooking time. If using fresh green peas, add it in its stage.) Then add capsicum and tomatoes and stir. (no need to cook now as tomatoes and capsicum soften quickly)

Add in Bisi bele bath powder, grated coconut, powdered jaggery, tamarind paste, salt and let it cook for 2 minutes.

Add in cooked rice and dal. Add water and adjust seasoning. Stir occasionally and allow it to come to a boil until all the flavors are well combined. (Bisi bele bath thickens as it cools down, so adjust the amount of water according to your preference.)

In seasoning pan, heat oil. Add in mustard and let it pop. Add urad dal and fry until golden. Add in broken dry red chili, curry leaves and hing. Sauté and add the seasoning to Bisi bele bath. Stir and let it rest for 10-15 minutes before serving so that all flavors are infused.

Fry cashews and add it to the pot before serving. (You can notice how the dish has thickened in 15 minutes.

Serve hot Bisi Bele Bath with dollop of ghee on top and along with Boondi Mixture and Potato chips.
