This is an authentic stove top recipe of chicken tikkas grilled on stove top in a grill pan.The gravy is normally orange in colour.Tandoori masala ,kasoori methi and ajwain lends an unique flavour to this recipe,while adding cashewnuts and fresh cream or malai makes the gravy creamy.Serve this highly flavourful chicken tikka masala on a special lunch or dinner menu with jeera rice,tandoori roti or any Indian flatbread.

For chicken tikka, marinate boneless chicken cubes for 1 hour, with curd,tomato puree,tandoori masala,chaat masala,gramflour,pinch of orange red food colour,salt to taste,black pepper powder,kashmiri red chilli powder, ginger garlic paste and kasoori methi.

Meanwhile cube capsicum,tomato,onion with petals separated. Toss all in the chicken marinade and set aside.Make a paste of sesame seeds, lightly fried onion,cashewnuts,tomato,malai or fresh cream and ginger garlic paste.

Heat a grill pan.Drizzle oil and grill marinated chicken tikkas and cubed vegetables. Set aside.Add oil and ghee and sprinkle ajwain and half crushed whole garam masalas.When they splutter, add the ground paste,tandoori masala,red chilli powder,kasoori methi and fry till oil leaves sides.

Add the chicken tikkas,grilled vegetables and toss in the masala till well coated.Add half cup water and boil till chicken is done.

Sprinkle garam masala,pinch of orange red food colour and garnish with chopped coriander.Serve hot with jeera rice,tandoori roti,poori or any Indian flatbread.
