Ingredients

2-3 people
  1. To make mix veg:
  2. 1 cupcauliflower chopped in small pieces
  3. 1/2 cupcarrot chopped in small pieces
  4. 1/4 cupcorn kernels
  5. 1/4 cupcapsicum chopped in small pieces
  6. 150 gramspaneer cut into small cubes
  7. 1 serving spoonoil to saute vegetables
  8. To make gravy we need:
  9. 3medium size tomatoes chopped
  10. 1large onion chopped
  11. 1 inchginger
  12. 6-7 clovesgarlic
  13. 2green chillies
  14. 2dry red chilli
  15. 1/2 tspcumin seeds
  16. 1 tbspoil
  17. 1 tbspbutter
  18. 1 tbspfresh cream
  19. Dry spices required to make mix veg:
  20. 1 tspkasuri methi
  21. 1/2 tspred chilli powder
  22. 1 tspcoriander powder
  23. 1/2 tspgaram masala powder
  24. 1/2 tspturmeric powder
  25. to tasteSalt
  26. To make chapati:
  27. 1 cupwheat flour
  28. as required Water

Cooking Instructions

    To make mix veg: heat around 1 serving spoon oil in a pan. Add chopped cauliflower, carrot, corn kernels and capsicum in the pan. Saute on high to medium heat for 3-4 minutes till the vegetables are 80% cooked. Now, keep the cooked vegetables aside and remove excess oil keeping 1 tsp of oil remaining in the pan.

    Now, we will make gravy. For this,heat 1 tbsp oil in another pan. Add cumin seeds, dry red chilli, chopped onion, ginger and garlic cloves and green chillies. Saute on medium to low heat till the onions become soft. Then add chopped tomatoes and saute for another 2-3 minutes. Switch off the flame when tomatoes become soft.

    Let this mixture cool completely and then grind it to make a smooth paste.

    Now, add butter with 1 tsp of oil in the pan we used to saute vegetables and heat. Add all dry spices and saute well for 20-30 Seconds.

    Then add the gravy paste into it and saute for 4-5 minutes. When oil starts coming on the sides of the pan, add the fried vegetables and mix well.

    Add salt and cubed paneer and fresh cream. Then mix well. Cook covered for 3-4 minutes. Then switch off the flame. Garnish with chopped coriander and serve with chapatis.

    To make chapatis: take wheat flour in a bowl add water gradually and mix to make a soft dough.

    Divide it into equal portions depending on the size of the chapati you want to make.

    Roll it into thin round shape using a roller.

    Heat a tawa and make chapatis.

    Note: you can add or replace vegetables according to your taste and availability. I made it without french beans as it was not available with me and used corns in place of green peas.
