Mini Broccoli, Pea, and Pesto Burgers

I bought some vegetarian broccoli and pea burgers at the grocery store... I simply recreated them at home, adding pesto for extra flavor.

I bought some vegetarian broccoli and pea burgers at the grocery store... I simply recreated them at home, adding pesto for extra flavor.
Cooking Instructions

Boil the broccoli after cleaning and cutting it into pieces.

When the broccoli is almost cooked, add the frozen peas.

Drain and let cool slightly. Meanwhile, crush the melba toast or rusks for breading (you can use breadcrumbs instead if you prefer).

Place the broccoli and peas in a bowl and mash them with a fork. Leave some chunks; do not make a puree.

Add one egg, your choice of spices (I used herbes de Provence), and the tablespoon of pesto.

Add the oat flour, mix everything well, and refrigerate for 10 minutes.

Shape the mixture into burger patties, dip them in beaten egg, then coat with the crushed melba toast or breadcrumbs.

Heat a little olive oil in a nonstick skillet and cook the burgers until golden brown.

These are a great alternative to meat burgers.

Serve hot and crispy.
