I ate this often while living in Canada. I wanted to try to make it myself, so I found a recipe on an American recipe site, used ingredients that I had on hand, and decreased the sugar and oil.

The nuts and dried fruits are optional.
I added maple syrup for extra flavor, but it's also optional.
I added rum to the icing, but vanilla also works well. Recipe by imomofolio

  1. 2 largecarrots
  2. 3 largeEggs
  3. 125 mlVegetable oil
  4. 200 gramsBrown sugar
  5. 50 mlMaple syrup
  6. 300 gramsCake flour
  7. 1 tbspBaking powder
  8. 2 tspCinnamon
  9. 70 gramsAlmonds
  10. 30 gramsRaisins
  11. 30 gramsDried cranberries
  12. Icing
  13. 120 gramsCream cheese
  14. 115 gramsPowdered sugar
  15. 100 gramsUnsalted butter
  16. 2 tspRum

Cooking Instructions

    Finely mince the carrots in a blender.

    Add the nuts and dried fruits to the blender and chop up finely along with the carrots.

    Place the eggs, oil, brown sugar and cinnamon in a separate bowl and mix together. Then add the contents of the blender and mix again.

    Then add the flour and baking powder, and mix.

    Pour into a mold and bake for 30 minutes in a preheated oven at 175°C.

    Make the icing. Bring the butter to room temperature, then thoroughly whip with the cream cheese and powdered sugar.

    After the cake has baked and cooled completely, spread on the icing.
