Sundried tomato pistachio pesto penne

This is my version of pesto. I simply love a good pesto, and I could live on pasta for the rest of my life. This is my version where instead of pine nuts I used pistachios. You can even use sunflower seeds or any other cheaper seeds and will still be delicious. I added a bit of spice to it with some dried chili flakes! It’s mouthwatering!

Wash basil leaves well, and prepare the rest of the incredients

De shell pistachios and on low heat toast them in a pan for 10 min. Do not add olive oil, just the seeds.

Place all ingredients in a blender / mixer and pulse until the consistency of your liking.

Cook pasta of your choice, and to serve place 4 TS of the pesto you just made, drizzle some olive oil over pasta mix well, add some parmesan and enjoy!
