A delicious appetizer or side dish. Since it's zucchini season, I love cooking them in every way possible.

Slice the zucchini into thin rounds. Place them in a bowl, sprinkle with salt, toss gently, and let rest for 30 minutes.

After 30 minutes, add 5–6 tablespoons of Parmesan cheese, 1 egg, and 2 tablespoons of flour to the zucchini. Mix gently, then add the remaining 2 eggs and the rest of the flour. Mix again.

Pour vegetable oil into a skillet and heat it. To test if the oil is hot enough, dip a toothpick in the oil—if bubbles form, it's ready. Using a spoon, scoop the batter and start frying.

Brown the fritters on both sides, then place them on a plate lined with paper towels. Finish frying all the batter. Enjoy as a great appetizer or side dish.
