Microwave-marinated anchovies are quick and easy. When I bought the anchovies, they were very fresh, so I chilled them for 24 hours. If you freeze them for at least 48 hours, it helps kill a parasite called Anisakis that can be present in oily fish. Freezing or deep-chilling is important for food safety.

    Start by cleaning the anchovies after freezing or deep-chilling them.

    Remove the head from each anchovy.

    Take out the innards and the backbone.

    Handle carefully and rinse under cold water.

    Arrange the anchovies side by side on a plate, microwave for 2 minutes.

    Season with salt, pepper, and strained lemon juice.

    Finally, drizzle with olive oil and let marinate until lunchtime. (I like to chill them in the fridge for a bit.)
