Jijimi (Korean Savory Pancakes) with Chinese Chives and Cheese

Have fun improvising with different ingredients as well!
You can add or replace Chinese chives with spinach or komatsuna greens, or you can also try adding carrots or ground meat.
Adding a small amount of ingredients will not affect the batter and should hold together fine.
My 1 year-old son enjoys this as his favorite finger food.
Leftovers can be stored in the freezer. I recommend using onion for sweetness. Measurements doesn't have to be accurate. If you cook over medium heat, it'll come out nice and gooey. Combine all ingredients listed with ◇ into a bowl. Mix very well.

Cut chives into bite-size pieces, and thinly slice the onion. Mix these cut up vegetables and melting cheese into ◇ from step 1. Mix everything evenly.

Add both oils in a pre-heated pan. Thinly pour half the batter and cook both sides over medium heat. Turn over once it is nicely browned on one side.

Once browned, enjoy with your favorite sauce Some ideas: ponzu + gochujang + hot sesame oil, soy sauce + vinegar + hot sesame oil.

I personally don't separate the batter in two batches and just cook the whole thing at once It gets crispy so turning it over is not as hard as you think!
