Farsi Puri

Farsi Puri is a type of delicious fried snack which is prepared using all-purpose flour and semolina. It is a crispy snack which goes well with a cup of hot tea or coffee. Use of ghee in this recipe makes puri crispy and soft at the same time.
My mother used to make all homemade snacks when I was a kid and this is one of my favourite dry snacks. Even my kids love this as I too make it quite often.

First of all mix semolina and ghee very well with the help of your fingers. Now add turmeric, cumin, back pepper and salt to it and give it a good mix. Add all purpose flour and baking powder. Mix everything well. Start adding cold water little at a time and make a stiff dough. Knead the dough for 2 to 3 minutes then cover and keep it for 15 minutes.

Divide the dough into 24 equal portions. Now take one portion and roll out a thick puri out of it and make cuts with the help of a knife. Prepare 5-6 puri in the same way.

Heat oil in a pan at medium heat. Add puris to the medium hot oil and fry it for a minute. Now keep the flame low and keep on frying until light pink in colour. You can roll other puris to fry while one batch is frying as it takes some time to fry the puris. Do not fry it on high heat as it will not be crisp. It does take time to fry this puri.

Fry all the puris in the same way.

Serve farsi puri as a dry snack with a hot cup of tea or coffee.
