Ingredients

1 hour
4 servings
  • 3-4parsnips peeled and diced
  • 3-4carrots peeled and diced
  • 2-3tomatoes roughly chopped
  • 750 mlvegetable or chicken stock
  • Salt & pepper
  • Teaspooneach of Coriander and cumin
  • Teaspoonmustard seeds
  • Olive oil
  • leavesCoriander

Steps

1 hour
  1. 1

    Place all chopped vegetables in a baking dish/ tray. Sprinkle over with generous dollop of olive oil and the spices and mustard seeds. Bake in 180 degree oven for 30-40 minutes

    Put in blender with some of the stock and blend for couple of minutes till smooth

    Transfer to stove top, add rest of stock and bring to boil

    Serve with sprinkle of coriander / dhania leaves and a piece of toast with cheese👍
