Dice half an onion, 2 peppers and 2 brown mushrooms. Sauté in a pan.

Add half a chilli and a can of tomatoes and simmer for 10 minutes

Remove from heat and scoop a space for each egg. Add eggs into the pan.

Cook eggs on 180 degrees Celsius for 7 minutes for a medium consistency

Serve with feta, olives and coriander on crusty sourdough or any bread of your choice.
