Dragon potatoes is an indo chinese fusion dish prepared with fried crispy sticks of potatoes tossed in spicy sauce. This spicy, flavourful and finger licking dish can be served as a starter or a side dish.

Dragon potatoes is an indo chinese fusion dish prepared with fried crispy sticks of potatoes tossed in spicy sauce. This spicy, flavourful and finger licking dish can be served as a starter or a side dish.

Wash and peel potatoes and cut them into medium thick sticks. Wash it with water 2 to 3 times and soak them in water for 15 to 20 minutes. Prepare all the veggies required for the sauce.

Drain the potatoes and sprinkle corn flour, salt and pepper on wet sticks. Mix everything to coat each stick with flour.

Heat oil in a pan and add a few sticks at a time. Fry on high heat until golden brown in colour. Do not over crowd the pan, add a few sticks at a time. Fry all the sticks in the same way.

To prepare the sauce, heat oil in a pan and add curry leaves. Now add chopped ginger, garlic and green chillies and saute it until garlic turns pink in colour. Now add onion and capsicum to it and saute it on high heat for a minute. Now add schezwan sauce, soya sauce, tomato sauce and salt to it and mix everything well.

Mix corn flour in half cup of water and make a slurry out of it. Add it to the pan and mix everything well. Cook it on medium heat until the sauce thickens. Now add fried potato sticks to it and mix everything well. Cook it for 2 minutes and sprinkle it with spring onion leaving some for garnishing. Turn off the heat.

Serve dragon potato garnished with some spring onion. It can be served as a starter or a side dish.
