Ingredients

  • 2 tablespoonsshrimp paste
  • 2 tablespoonsdried shrimp
  • 20 clovesmedium garlic
  • 2medium shallots
  • 10chili peppers
  • 1/2 tablespoonpalm sugar
  • 2limes
  • 3eggs
  • 1 bunchcha-om (acacia leaves)
  • mackerel

Steps

  1. 1

    Pound the dried shrimp until finely crushed.

  2. 2

    Add the chili peppers, garlic, and shallots. Pound until well combined.

    Add the shrimp paste and season with palm sugar and lime juice. Pound until the mixture is well blended.

    Spoon into a bowl and sprinkle with dried shrimp.

  5. 5

    Crack the eggs into a bowl, add the picked cha-om leaves, and sliced shallots. Beat until well mixed.

    Fry the egg mixture until cooked, then cut into pieces.

  7. 7

    Fry the mackerel.
