Ingredients

2 people
  • 5-6 pcsPre-boiled and tender pork ribs or tail (unsalted)
  • 1-2tomatoes, chopped
  • 4garlic cloves, chopped
  • 1onion, chopped
  • 1 bunchOkras or green beans, sliced
  • 1/4 cCoconut milk (fresh) or (3Tbsp coconut powder mixed in water)
  • 2-3 tspscoop of spicy shrimp paste (Thai, Filipino, Malaysian, Indonesian, Singaporean - any works! Remove liquid if watery)
  • Cooking oil for sauté
  • Pepper, to taste

Steps

30 mins
  1. 1

    In a sauce pan, sauté the garlic and onions in oil until fragrant.

  2. 2

    Drop in sliced tomatoes together with its juice /seeds. Sauté

  3. 3

    Add coconut milk. Bring to a simmer.

  4. 4

    Add sliced okra or green beans and cooked pork ribs. Cover and cook on low heat, mixing often, until veggies are cooked and sauce thickened.

  5. 5

    Serve with hot rice and enjoy!
