Ingredients

Serves 2 servings
  1. 4-5large carrots
  2. 1 cupmilk (240 ml)
  3. 1/2 cupsugar (100 grams)
  4. 1/2 cupkhoya (mawa) (about 100 grams)
  5. 8-10almonds, finely chopped
  6. 8-10raisins, rinsed
  7. 7-8cashews, finely chopped
  8. 4-5pistachios, finely chopped
  9. 5cardamom pods, ground
  10. 1/4 cupghee (60 ml)
  11. 1 tablespoonmixed dried fruits and nuts

    Peel, wash, and grate the carrots.

  2. 2

    Place a large skillet or heavy-bottomed pan on the stove. Add the milk and grated carrots, and cook over medium heat.

  3. 3

    Stir the milk and carrots regularly with a large spoon.

  4. 4

    When all the water from the carrots has evaporated and the milk has thickened and mixed well, add the sugar and ghee. Mix thoroughly.

  5. 5

    Once the sugar dissolves, continue to cook until the mixture dries out again.

  6. 6

    When the carrots are cooked and all the liquid has evaporated, mash and mix in the khoya (mawa). Stir well.

  7. 7

    Add the chopped almonds, raisins, cashews, pistachios, and ground cardamom. Cook over medium heat, stirring continuously.

  8. 8

    Turn off the heat. Your delicious gajar ka halwa is ready. Serve hot without delay.
