Steps

Peel, wash, and grate the carrots.

Place a large skillet or heavy-bottomed pan on the stove. Add the milk and grated carrots, and cook over medium heat.

Stir the milk and carrots regularly with a large spoon.

When all the water from the carrots has evaporated and the milk has thickened and mixed well, add the sugar and ghee. Mix thoroughly.

Once the sugar dissolves, continue to cook until the mixture dries out again.

When the carrots are cooked and all the liquid has evaporated, mash and mix in the khoya (mawa). Stir well.

Add the chopped almonds, raisins, cashews, pistachios, and ground cardamom. Cook over medium heat, stirring continuously.

Turn off the heat. Your delicious gajar ka halwa is ready. Serve hot without delay.
