Grandma Nina's Eggplant Meatballs

Cooking Instructions

Coarsely chop the eggplants directly in a saucepan (1). Add a little water (2), then cover and boil for about ten minutes (3). Meanwhile, soak the bread in a bowl of water (4).

Once ready, drain the eggplants (5) and set them aside. Squeeze the bread well (6), as well as the eggplants (7), then combine them in another bowl and mix with your hands (8).

At this point, add the Parmesan and Pecorino cheese (9), then add the chopped basil (10). Add a crushed clove of garlic (11) and finally the egg (12).

Add salt and mix everything with your hands (13). Meanwhile, pour plenty of vegetable oil into a pan and heat it up. Form the eggplant meatballs and fry them (14), then drain them once golden on both sides (15). Our Grandma Nina's eggplant meatballs are ready to be enjoyed (16) !!! Enjoy your meal 😋
