Nut Butter Protein Balls

Almond and peanut butter, chopped hazelnuts, cocoa, and dried cherries give protein a flavorful blast to get an after workout boost of energy.

Ingredients

  1. 12 ozalmond butter
  2. 4 ozsmooth peanut butter
  3. 1/2 cuptoasted, ground golden flax seed
  4. 1 cuphazelnuts, coarsely chopped
  5. 1 cupMontmorency cherries, sliced in half
  6. 1/2 cupcocoa powder
  7. 1/2 cupchocolate whey protein powder
  8. 1 tbspespresso powder
  9. 1/2 tspfine sea salt (if you use salted peanut butter, otherwise 3/4)
  10. 4 tbspmaple syrup
  11. 2 tbspblackstrap molasses
  12. 1/2 tspvanilla

Cooking Instructions

    Preheat oven to 350º

    On a silpat lined baking sheet, bake the flax seed for 8 minutes, being careful not to burn.

    Remove from the oven, transfer to a bowl and cool for 15 minutes.

    Chop the hazelnuts coarsely.

  5. 5

    Slice the cherries in half, reserve.

  6. 6

    Grind the flax seed into a coarse powder.

  7. 7

    In a medium mixing bowl, whisk the dry ingredients: cocoa powder, chocolate whey protein, espresso powder, flax powder, and salt.

    In a separate mixing bowl, stir the maple syrup, molasses, and vanilla extract. Fold in the chopped nuts and cherries.

    Fold in both nut butters.

    Add the dry ingredients, 1/3 at a time. Don’t be afraid to get your hands sticky!

    Separate into 1 oz. balls, wrap in plastic, refrigerate.

    Workout.

    Consume.
