Just-Mix Kohlrabi Pickles

is the daikon radish version of these easy just-mix pickles.

Not much liquid comes out from Kohlrabi so if you are making it in a tupperware container, increase the amount of the ◆ marked ingredients.

Even when you use a plastic bag, make sure you are using enough of the ingredients marked with ◆ so that all the kohlrabi is submerged in liquid. Recipe by Popotankobu

Ingredients

  1. 1/8Kohlrabi
  2. 25 ml◆Vinegar
  3. 1 tbsp◆Salt
  4. 8 tbsp◆Sugar
  5. 1 tsp◆Sake

Cooking Instructions

    Peel the kohlrabi and thinly slice into any shape you like. Add the ◆ marked ingredients into a plastic bag with the kohlrabi and keep in the refrigerator for 1-2 days to pickle. You're all done!

    Here are some additional notes.

    If you wash the red kohlrabi peel and place it in the pickling juice with the rest of the vegetable, your pickles will turn a nice light pink colour.
