Mul (Water) Kimchi Instant Pickles
I get cravings for this mul kimchi on hot days. Since real pickling and fermentation take a little time, on those days I use some vinegar to enjoy this instant mul kimchi. It's too much trouble for me to rub the vegetables with salt and wait hours until they are ready, so I just used the microwave.I make this with a mixture of rice vinegar and apple vinegar. Garlicky Pounded Cucumber Pickles
The cucumber dish served at a certain chain restaurant was delicious, so I tried to recreate it at home.Adjust the amount of salt to taste. It should be on the salty side if serving as pickles, and less salty if serving as a drinking appetizer. Be sure to taste and adjust the seasoning. The kombu tea is optional, but I highly suggest it. For 2 servings. Recipe by smooth

Yuzu Flavored Daikon Namasu Pickles with Dried Persimmon for Osechi
My mother told me that dried persimmon taste great with daikon namasu pickles, so with the yuzu from my garden and flavorful dried persimmons, I made some daikon namasu.I'm posting it here for my own record. This tastes good if you make it during the day and serve it at night, but it's even better after a day, once the dried persimmon absorbs the juices. It will keep in the refrigerator for 2 to 3 days if stored in a tight resealable container. For 4 servings. Recipe by Ponie

Easy and Colorful Yellow Cucumber and Onion Pickles
From middle school to high school, I would often visit a Protestant church.I recently recalled how the pastor of the church would always serve these pickles during meals, and taught me how to make them. While they are on the sweet side, they taste almost exactly as I remembered.Try it during the summer when you need a way to consume your stock of cucumbers. If you drain the cucumbers after brining, use less seasonings overall. This recipe makes a sweet pickle, so adjust to taste. You could also use powdered white pepper, but in that case, reduce it to about 1 teaspoon. They will last in the refrigerator for up to a week. Cucumber Pickles for Burgers
Commercially made pickles are too sweet or just not to my taste, so I decided to make my own.Crack the peppercorns roughly. Add some ground black pepper too if you have it.Add the red chili peppers to taste. The pickles are still delicious without them. Recipe by Rarumu

Persimmon Namasu Pickles
Autumn is the season for persimmons! You can enjoy them as is, but why don't you occasionally add them to a savory dish? It's easy and quick recipe. This recipe was created by Ms. Kiyoko Tawara, a food writer using local ingredients from the Masuda region of Shimane prefecture.Mix the tightly squeezed daikon and persimmon in a separate bowl before adding the combined vinegar so that the flavor will penetrate evenly. It will also help the daikon and persimmon to preserve their shape, and the dish will look better. Recipe by Takatsugawa friend river

My Ploughman's Pickle
What best way to use some of the garden produce than a pickle for the sandwiches for the rest of the year. This time I used the last part of the mixture and put it through a hand held blender to make a spreadable version. Fingers crossed it will work out fine. After blending I returned for a minute to boil with some extra vinegar.

Turnip Senmai-Zuke (Kyoto-style Pickles)
I used a thick turnip to make Kyoto-style senmai-zuke.A slicer will slice the turnips too thinly and eliminate the texture. Use a knife to slice the turnip slightly thicker than you feel you should. As a matter of fact, my friend used this recipe and brought pickles to her boyfriend's mother as a gift, and it was a success! She is now married to him! Recipe by Pepperminttea

California Farm Pickle Miniature Cucumbers
Armenian and persian cucumbers grow well here in our hot desert climate, and we pick them in June, when still small, before they produce a lot of seeds. Skin on, pickled fresh with a solution of boiled wine, vinegar, sugar, water and spices. They hold their delicious, crunchy, sweet-sour-spicy-fresh taste all year, fresh or sterilized. To maintain their tender taste, we do not add the pickling spices we normally use to pickle fully grown English and Californian cucumbers. If not eaten after a week in the fridge, we sterilize the leftover pickles in their mason jar in a waterbath, 15 minutes and keep them in the pantry.#GlobalApron

Delicious Tartar Sauce without Pickles
I love a tartar sauce that has a lot of veggies in it. When I replaced the pickles with vegetables rubbed with sushi vinegar, it was so delicious. As you can see, it's so easy to make this without pickles It goes great with a salad or sauteed fish.Finely chopping up the vegetables and the egg helps the flavors blend well with the mayonnaise and makes the sauce smooth, so it's easy to eat with fried foods. If you're having this with bread or canapés, use a little less mayonnaise so it's less runny. If you're going to use it as a sauce, then add in some milk to thin it out! Recipe by Heartful Kitchen Rei

Canning Homemade Dill Pickles
This recipe is simple and tastes so good. You can make hamburger style pickles, whole pickles, or spears. This recipe is a brine that can be used for all shapes of pickles! Change it up a bit with different kinds of ingredients to your liking. I will be using garlic, pepper corn, and dill weed for this recipe. Canned pickles will have a shelf life of a couple of years. There's nothing more satisfying than canning veggies straight out of your garden. Enjoy, and please like and follow for future recipes from DeDee!

Bread & Butter Pickles
I have cucumbers coming out of my garden faster than I can eat them! Here's how I enjoy them all year and get a jump start on what's going in the Christmas baskets this year. The Thyme and Allspice are unconventional ingredients that add a unique taste. This recipe makes 9 pints but you can definitely adjust the ratios for smaller quantities. The longer they sit, the better they taste. Plan to fix ahead of time (like a week or two ahead) and store in the fridge until you are ready to serve. I make huge batches and then when the picnic/cookout invites come, I'm ready.

For Osechi Matsumae Pickles with Herring Roe
This is just a simple dish that I made with store-bought pickles. If you don't have enough sauce, feel free to top it up with soy sauce, mirin or cooking sake. If you find it too rich, then you can dilute it with hot or cold water. Alternatively, you could add diluted mentsuyu instead. If you aren't using store-bought pickles, finely slice the kombu and dried squid and then carry out the same steps as in the recipe.Salmon roe also makes a delicious addition to this dish. Zha Cai (Sichuan Pickle) and Spinach Soup
I have been making this soup since I started cooking.By making the most of the flavors from the seasoned zha cai, you only need to add a little stock powder and soy sauce to the soup☆I measured the ingredients to make this , but I normally I just wing it.You don't have to be very strict with the amount of the ingredients used. Adjust the amount of soy sauce to your liking. Recipe by mmmmmio

Just Mix and Wait - Easy Pickled Daikon Radish
This is the daikon radish that my mother-in-law made for the New Year's feat. It's so good that whenever I made it, it gets eaten right up!The recipe that my mother-in-law taught is 2 kg daikon, 100 ml vinegar, 80 g salt, 2 tablespoons sake, and 300 to 400 g sugar.I adjusted it to an easy-to-consume amount using 1/2 a daikon. At first, I wondered if it was right to cover the daikon in sugar and salt. The water from the daikon will be drawn out, so use a container that will give the daikon some room.If you reuse the vinegar, it will be too thin, so I recommend draining half of the water. I recommend using it as marinade, and adding in half of the amount of ingredients for a second pickling. Recipe by Popotankobu
