Ingredients

  1. 2medium Russet potatoes
  2. 4 stripsBacon
  3. 3 tbspMelted butter
  4. 1 tspBlack pepper
  5. 1/4 tspSalt
  6. 1 tspGarlic powder
  7. 1/2 tspGinger powder
  8. 1/2 tspOnion powder

Cooking Instructions

    Preheat oven to 425 F
    Wash potatoes and dry.

    On a cutting board, place a potato lengthwise partially slice each potato into about1/6 inch thick slices. Make sure not to cut all the way through. I used the chopsticks as a safety guard.

    Cut bacon to 1- 1.5 inches pieces and insert a piece of bacon into each slit.
    Place potatoes on a baking dish covered with parchment paper.

    In a small bowl, mix melted butter (I used ghee) and all dry seasoning. Then brush it on to each potato.

    Put it into the oven and bake about 45 minutes. Serve with over easy egg and sautéed vegetables (I used spinach, onion andmushrooms). Ear the slices of potato with bacon dipped into runny egg. A taste of heaven. Enjoy your power breakfast 😋.
