Easy! Simple Spinach With Sesame Sauce (Gome-ae)

This is my grandmother's recipe.
Microwave cooking times vary, so please adjust to your machine.
Ours is a 600 W model.
The dish is very hot when you take it out of the microwave, so be careful not to burn yourself!
The reason for putting the spinach in cold water is to remove any bitterness.

Cooking Instructions

Put the ☆ ingredients in a bowl and mix well.

Wash the spinach under running water. Make cuts into the root ends. Line the spinach on a sheet of plastic wrap with the root ends alternating, and microwave for 2 minutes.

Take the plastic wrap off and put the spinach in ice water.

Line up the root ends of the spinach bunches before taking them out of the water. Holding the spinach up by the root ends, squeeze the spinach well from the top.

Cut the root ends off and cut the rest of the spinach into 3 to 4 cm lengths. Add to the combined ingredients from Step 1, mix well and transfer to serving plates!

If you are using roasted sesame seeds, grind them up in a grinding bowl before adding them to the mixture in Step 1! It will be very fragrant.

If you get a lot of spinach, you can wrap up the squeezed out spinach after Step 5 and freeze it in an airtight container.

This is delicious made with pea shoots too.
