We can serve this rice with homemade aioli...

Sauté the garlic and onion in a little olive oil. Then add the squid cut into pieces and let it cook for about 10 minutes with the sautéed onion and garlic.

Once the squid is sautéed, add the tablespoons of tomato and sauté for another 5 minutes to reduce a bit.

Add the rice and sauté everything for a few minutes, then add the squid ink, salt, and pepper, and stir.

Gradually add the hot water or stock, and let it boil for 10 minutes, then remove from heat and let it rest, and it's ready.
