Here, fried aubergines are placed over yogurt and seasoned with roasted cumin powder to produce this delectable relish.

Prepare the yoghurt:Whisk the yogurt, then set it aside. Grind together the garlic, green chillies, and coriander to a fine paste. Mix this paste and a little salt with the yogurt.

Fry the aubergines: Heat 50gm of oil in a flat pan. Sprinkle a little salt over the aubergine on both sides. Fry the aubergines pieces to a rich golden brown. Set it aside.

Assemble: Place the yoghurt in a slightly deep and wide serving dish. Arrange the fried aubergine over the yoghurt. If the pieces are too large they can be cut into 2. Sprinkle the roasted cumin powder and the red chilli powder over the aubergine.

Prepare the baghar: Heat 1tbsp oil. To this, add cumin seeds followed in just about 5-10 seconds by the red chillies. As soon as the colour of the red chillies darken a little, add the curry leaves and remove from flame in about 5-10 seconds. When slightly cool, pour the Bashar over the aubergine relish. Keep refrigerated till it is served.
