Za'atar Manaqish / Za'atar Bread

Za'atar Manaqish is a Mediterranean and Middle Eastern Flat Bread made with Simple bread dough topped with Olive based Za'atar spread.
It's like a mini pizza with Za'atar topping
When I had it for the first time with Toum, fresh from a local bakery here in Bahrain, I had simply fallen for it.
Then I started making it at home as Za'atar is readily available and I love baking breads
For Za'atar ( which simply means any herbs in Arabic ) you can make a simple mix of Oregano, Thyme, Sumac, Toasted White Sesame seeds and salt as per taste. Some add Toasted Cummin and Coriander powder too.
Note : Generally it's made with All-purpose Flour but I have used All-purpose Flour and Whole Wheat Flour both mixed in this recipe.

Put all the ingredients in a bowl and add lukewarm water and knead it into a smooth dough, knead it for about 8-10 minutes, apply olive oil and cover with a cling film and let it proof for an hour.

Once the dough proofs (doubles in size), punch it knead it for a minute or so, divide the dough into roughly equal size and cover with a wet thin cloth and keep it for 30 minutes to proof.

While the dough is proofing, mix the za'atar and the olive oil in a bowl. Heat oven to 400°F and line a baking tray with parchment paper and heat the tray. Oil the heated tray, flatten the dough into 4-5 inches disc, with finger make indention in the discs (prick it with a fork to prevent it from puffing up while baking) and gently spread the za'atar and Olive oil mix on it, leaving the edges. Do this for all the doughs.

Arrange it on a tray with enough space. Bake in the preheated oven for 7-8 minutes or until the bottom and edges are browned. Take it out of the oven and let it rest for about 5 minutes.
Serve warm or at room temperature with Toum or Labneh...I love it with Toum.
It's great as an appetizer with the Mezza Platter too.
