Crispy Spring Rolls

This Indo chinese appetizer is everyones favourite. Be it a kitty party or a marriage function, this is mostly a mandatory snack. Spring rolls are crispy layers, filled with vegetables and noodles. Deed fried to perfection. Best part in these spring rolls is that these are 100% homemade and made with wheat flour along with refined flour. Do give it a try. This recipe calls for a 3 step process. Sieve both the flours, salt, pepper together. Add oil and water to make a soft dough. Cover it and keep it to rest. till we prepare the filling.

In a wok, add oil, garlic and saute. Add all the veggies one by one on high flame. Add noodles, sprinkle salt and rest of left over ingredients, check the seasonings. Now make rolls of the dough, with help of maida. Make a poori size for all the rolls.

Pick two or three sheets, apply oil on each and sprinkle maida over each and stick them one on top of the other. You can make these with two or three pooris, at one time by dusting some more maida, roll them in a bigger size.

Heat a griddle and cook. While cooking, see that that sheets remain white on both sides. Repeat this step for rest of sheets. Cool them for few seconds.

Very carefully remove each sheet, from one another, such that you get, thin sheets. Check the pic for reference. Pick each sheet, cut them in big squares, fill in the fillings in the center role them, and with help of corn flour paste, seal it from the edges. Repeat for all wraps.
Fry them on medium flame, till crispy. - 6
DO not waste the cuttings of the sheets. you can fry them too in the last, separately, till crispy. Sprinkle chaat masala and use them as separate snack with tea or coffee.

Serve these crispy spring rolls with hot n sour soup.Indeed a very tempting and satisfying meal by itself!!
