Here’s an excellent recipe that’s a nice change from regular pancakes. These pancakes are delicious with good honey, but you can top them with whatever you like. I made this recipe with my Monsieur Cuisine, but you can use any food processor or even make it by hand! I found this recipe on Cookomix.

Ingredients

Serves 12 servings
  1. 3 1/3 cupsextra fine semolina (about 500 grams; fine semolina also works)
  2. 1/2 cupall-purpose flour (about 60 grams)
  3. 3 2/3 cupswater (about 850 grams)
  4. 1 teaspoonsalt
  5. 2 packetsbaking powder
  6. 2 packetsinstant dry yeast
  7. 2 tablespoonsgranulated sugar

Cooking Instructions

    Place all the ingredients in a food processor or a large mixing bowl.

    Mix for 5 minutes on high speed in the processor, or whisk vigorously by hand.

    Let the batter rest in a bowl for 30 minutes in a warm place.

    Pour a ladleful of batter into a nonstick skillet without adding any fat.

    Cook over medium heat on just one side.

    Holes will form as the pancake cooks. Place each pancake on a clean kitchen towel to cool, without stacking them, to prevent sticking.
