Purple Sweet Potato Steamed Layer Cake (Bánh da lợn khoai lang tím)

You can still make delicious, beautiful Bánh da lợn even without coconut milk or mung beans. The result: smooth, soft, chewy, just the right amount of sweetness, easy to separate into layers, and it stays soft in the fridge. Plus, the purple color is just lovely!
If you're short on ingredients during this time, try my method.
Our family likes to experiment, and it still turns out tasty!
Good luck!

Steps
- 1
Mix all the ingredients for the white layer and strain until smooth. Do the same for the purple layer.
- 2
Grease the mold with oil to prevent sticking. Steam the first layer until it turns translucent and is cooked through (about 4-5 minutes). For each following layer, increase the steaming time by 1 minute. Steam the final layer for 15-20 minutes.
- 3
When steaming, cover the pot lid with a towel and tie it to prevent water from dripping onto the batter and making the cake soggy.
- 4
Let the cake cool completely before cutting.
