Wrap the chicken in plastic wrap or place it in a ziplock bag, then pound it thin with a mallet or rolling pin. Once pounded, place the chicken in a large bowl and season with salt, pepper, oregano, and garlic.

Heat oil in a pan over medium-high heat. Since the chicken is pounded thin, you don't need much oil for frying. Dip each piece of chicken in the following order: flour > eggs > panko breadcrumbs. Turn to coat the chicken evenly with each ingredient. Fry until golden brown, then remove and drain the oil.

Preheat the oven to 450°F. Line a baking tray with aluminum foil. Place the fried chicken on the tray. Spread tomato sauce over the top of each piece of chicken. Sprinkle parmesan and mozzarella evenly over the top. Bake for about 10 minutes or until the cheese melts, then turn off the oven. Serve on a plate, adding a bit of parsley or green onions on top. Enjoy your meal.
