Dice the onion and tomatoes finely. Slice the zucchini and bell pepper thinly.

Make the sauce: Sauté the garlic until fragrant, then add the onion and sauté until golden and fragrant. Add the tomatoes, season with 2 teaspoons salt, 1 teaspoon pepper, and 1/2 teaspoon each of the herbs. Stir until the tomatoes are soft and cooked. Pour the sauce into a baking dish.

Arrange the zucchini and bell pepper in alternating colors until all are used. Sprinkle salt, pepper, and the herbs on top. Preheat the oven to 375°F (190°C) for 5 minutes, then bake for 30 minutes at 340°F (170°C).
