Bean filling: Chop the onion. Heat oil in a pan and add the chopped onion. Fry until translucent.

Drain the brine from the red kidney beans and add to the onions. Fry until all the liquid has evaporated.

Season with smoked paprika, cumin, salt and pepper.

Salsa: Finely chop the red onion and fresh coriander. In a bowl mix the red onion, coriander and pomegranate. Juice the lime and add the juice. Add the honey and mix. Season with salt and pepper.

Assemble: Place the bean filling at the bottom of the tacos.

Top sour cream and salsa
