Ingredients

  1. Large bag of prepared Mediterranean veg ready to roast (chunky cut red onion, courgette, squash, bell peppers, tomatoes, garlic etc)
  2. Drizzle of olive oil
  3. Oregano
  4. Thyme
  5. Fresh parsley
  6. Tinchopped tomatoes
  7. Tinchickpeas
  8. Large splash of balsamic vinegar
  9. Salt & pepper to taste
  10. Leftover rind of Stilton (optional)
  11. Cooked smoked sausage (optional)

Steps

45 mins
  1. 1

    Place veg in ovenproof dish with olive oil and sprinkle with thyme and oregano

  2. 2

    Cook according to instructions on packet, roughly 30 - 40 mins stirring Halfway through

  3. 3

    Transfer to a pot and add the chopped tomatoes, tinned chickpeas including the juice, 2 tbsp of chopped fresh parsley, balsamic vinegar, Stilton and cooked sausage if using. Season to taste.

    Serve with a little grated fresh Parmesan if you have it - enjoy
