For lunch today I pan fried the leftover squash from last nights dinner, with shiitake mushrooms and a dash of Tamari soy. Simple flavours and a dash of autumnal colour 😊

For lunch today I pan fried the leftover squash from last nights dinner, with shiitake mushrooms and a dash of Tamari soy. Simple flavours and a dash of autumnal colour 😊

Pan fry the mushrooms in a little oil until they start to colour and release their moisture. Add the Tamari sauce.

Add the chopped cooked squash and continue to fry for another 5 mins or so on a high heat. We want to heat it through and also get some golden colour on the veg.

Taste it here and add seasoning if you think it needs it. I added a small pinch of salt and pepper. It’s ready!
