A super quick breakfast loaded with veggies and thin vermicelli. This particular Indian style breakfast is a very healthy one too with favourite Veggies being added into it. Steps

Heat oil in a cooking pot. Add mustard seeds and curry leaves. After they stop spluttering, add dry red chillies. Also add garlic mince to it. Saute all that for a minute.

Add green chillies or red chilli flakes now. Add the finely chopped veggies now. Saute them on a medium high heat and do not cook much. Cover and cook for 6 to 7 minutes only until the raw smell disappears. Add water to it accordingly. Do not add more. Bring it to a rolling boil. Now add Vermicelli. Stir in with a wooden spoon and be gentle.

Simmer for about 5-8 minutes. Garnish with chopped coriander leaves. That's it. It's done. Serve it piping hot to your loved ones with any chutney of your choice or as it is.
