Crustless Quiche with Spinach

I want to make some quiche, but pie crust? No way! So, I made this using beaten eggs only.
The egg will burn if the heat is too strong!
Make sure you take your time and it it steam-cook.

Crustless Quiche with Spinach

Cooking Instructions

Shred cabbage, mince carrots.

Cover cabbage and carrots from Step 1 with plastic wrap and microwave for 1 minute. Boil spinach and chop into 3cm pieces.

Crack eggs into a bowl. Add milk and soup stock granules. Mix well.

Add the vegetables from Step 2 into the eggs in Step 3. Mix evenly.

Heat 1 teaspoon of vegetable oil in a small frying pan (18cm). Pour in the mixture from Step 4. Cover the pan and cook for about 5 minutes over low to medium heat.

Flip over as if peeling from the edges. Cook the other side for about 2 minutes to finish. Cut into six wedges and serve!

I wanted a tasty way to eat spinach, so I decided to make a quiche. And to make it health all around I made it with tofu. I included a ton of vegetables that I had in the fridge too.Eliminate any excess water in both the tofu and the vegetables to prevent this from becoming watery. If you leave out the bacon and egg and use soy milk, this is good for vegetarians too. Both the bacon and cheese are salty, so go easy on the seasonings.
