Crab Fettuccini w roasted tomato sauce

Ingredients

30 minutes
5-6 servings
  1. 1 poundcrab meat
  2. 1 poundfettuccini egg noodles/ I use Italian Lemon Pappardelle Noodles
  3. 1 poundfresh grape tomatoes
  4. 1garlic clove crushed
  5. 1 bunchfresh basil chopped
  6. 1sweet onion miniced
  7. Fresh herbs / olive oil
  8. Lemon
  9. 1/3 cuppasta water
  10. 1/4whipping cream
  11. Balsamic Vinegar

Cooking Instructions

30 minutes
  1. 1

    Place the tomatoes, seasoning, onion, garlic in a roasting pan. Add olive oil on top is together..put on a roasting dish for 1 hour on 425 w cover on.

    Uncover after one hour, stir add a drizzle of balsamic vinegar, stir, put back on oven uncovered for 10 minutes

    Boil Noodles, drain add olive oil and touch of lemon. Save pasta water!!’

    Take roasted tomatoes from oven. Add 1/3 cup pasta water and 1/4 cup whipping cream. Crush and stir sauce. Simmer for 10 minutes. Sauce should be creamy and get slightly thick. Add cream or water to taste and sprinkle sea salt and pepper.

    Add your thawed crab claw meat and simmer for 5 minutes.

    Prep pasta bowls w noodles, spoon sauce over and add fresh basil and Parmesan cheese if desired..
