Crab Fettuccini w roasted tomato sauce
Inspired by my farmers market tomatoes and crab!!
Cooking Instructions

Place the tomatoes, seasoning, onion, garlic in a roasting pan. Add olive oil on top is together..put on a roasting dish for 1 hour on 425 w cover on.

Uncover after one hour, stir add a drizzle of balsamic vinegar, stir, put back on oven uncovered for 10 minutes

Boil Noodles, drain add olive oil and touch of lemon. Save pasta water!!’

Take roasted tomatoes from oven. Add 1/3 cup pasta water and 1/4 cup whipping cream. Crush and stir sauce. Simmer for 10 minutes. Sauce should be creamy and get slightly thick. Add cream or water to taste and sprinkle sea salt and pepper.

Add your thawed crab claw meat and simmer for 5 minutes.

Prep pasta bowls w noodles, spoon sauce over and add fresh basil and Parmesan cheese if desired..

I wanted to use fresh tomatoes while they were in season.I used some orecchiette that I received from a friend to make some seafood pasta and tomato sauce with brandy.You can quickly make this by adding tomato sauce to pasta.If you add the basil after turning off the heat, it won't blacken.Definitely add brandy if you have it. If you cook the pasta just right, the residual heat of the pasta will warm up the sauce. It's a bit of a reduced sauce, so if using regular pasta, add more tomatoes.
