Salty Fried Firm Tofu

I haven't been able to get hold of the right chicken to make a certain salty fried chicken that I like at my local supermarket. I wanted to eat it so I used convenience-store tofu to make fried tofu and made something similar.

Wet your hands slightly when you are forming the batter into balls. Pour some lemon juice on top according to your preference. You can skip the salt from the ☆ ingredients and adjust the amount of salt after they are fried according to your preference. You could serve it with a large amount of lettuce and 1 tablespoon each of soy sauce, vinegar and sugar mixed in. It's delicious if you also add sweet vinegar sauce on top. (You could also skip the salt from the ☆ ingredients here, too if you do this.) Recipe by Aitaso

Ingredients

12 servings
  1. 200 grams☆ Firm tofu
  2. 1 dashless than 2 teaspoons ☆ Mayonnaise (low-fat mayonnaise is fine)
  3. 1/2 tsp☆ Sugar
  4. 1/2 tsp☆ Salt (please read the hints)
  5. 2 tbsp☆ Katakuriko
  6. 1just under 1 cm ☆ Garlic (from a tube)
  7. 1just under 1 cm ☆ Ginger (from a tube)
  8. 1Cake flour (batter)
  9. 1Frying oil (canola, olive oil)

Steps

  1. 1

    Thoroughly drain the water from the firm tofu. Add the ☆ ingredients into a bowl and mix together. Sprinkle cake flour onto a plate. Form the mixture in the bowl into bite-size balls and roll around on the plate to cover them with the flour.

    Add plenty of oil into a frying pan and heat. Form the balls into nugget shapes and fry in the oil.

    To remove the moisture from the tofu I place the tofu onto a plate without plastic wrap and heat in a microwave at 600W for 2 minutes. Place a chopping board or slightly heavy bowl on top of the tofu when it has cooled.

    The batter is too soft so you can wet your hands, shape it into a ball, roll on the plate and fry it like that.
