In a pan add the oil and saute the onions for a few minutes

Add the rest off the vegetables and give a quick mix, we don't want to over cook the vegetables

Add the pinch of salt, cajun spice and give another quick mix

Lastly add the prego sauce, mix and leave for another 2 minutes
- 5
Cut the pitas open and fill the pockets with this delicious mixture
- 6
Place on a platter and serve with roasted baby potatoes or chips
