English-Style Christmas Pudding

My sons loved Harry Potter so for a time I became obsessed with British cooking. I made a simple yet authentic pudding for them that uses bread crumbs. I served it with Harry Potter-style butterbeer. You can also make the breadcrumbs from scratch by finely blending some English bread too.

* Brush the pudding with brandy and leave it to sit for 2-3 days for a delicious flavor.
* This pudding will be even more moist after a day so leave it however long you like.
* This batter is pretty thick, so you'll end up getting a bit of a work-out. Recipe by Kumakumahaha

Ingredients

1 serving
  1. 140 gramsFresh panko
  2. 140 gramsUnsalted butter
  3. 120 gramsSoft light brown sugar
  4. 2Eggs
  5. 300 gramsDried fruit (of your choice)
  6. 1etc. Rum raisins, currants, cranberries, apple chps,
  7. 2 tbspBrandy (brandy for confectionery-use is OK)
  8. 20 gramsHoney
  9. 30 gramsCaramel sauce
  10. 50 gramsBread flour
  11. 10 gramsYour choice of spices:
  12. 1etc. Cinnamon, nutmeg, allspice,

Steps

    Cream together the butter (that has been left to warm to room temperature) and sugar.

  2. 2

    Once smooth, add the eggs, one at a time, then the dried fruit, brandy, honey, and caramel sauce in that order.

    Then mix in the panko, flour, and spices.

  4. 4

    Grease a pudding dish with butter, dust with flour (both not listed in ingredients), and pour in the batter from Step 3.

  5. 5

    Steam-bake the pudding for 40-50 minutes at 170°C.

  6. 6

    Once baked, quickly cover it tightly with aluminium foil. Then remove the pudding from the dish once cooled. This pudding tastes great served with whipped cream.

    My son made this candle out of a banana and a strawberry to go with it.
