Japanese Leek and Ginger Soup

Everybody in my family caught a cold... so I made a soup to warm the body with ingredients that help fight off colds.

Add grated ginger right before drinking so that you can really taste it and it's delicious.

You don't have to add pork, but the juices come out from the meat and adds savory deliciousness Cook with the ingredients (carrots, mushrooms, Chinese cabbage, etc) in the fridge! Recipe by Ryo---ko

Ingredients

4 servings
  • 2Japanese leeks
  • 2thumbs Ginger
  • 1 blockSilken tofu
  • 100 gramsPork
  • 900 mlWater
  • 1/2 tbspChicken stock granules
  • 1 tbspSoy sauce
  • 1 tbspSake
  • 2 pinchSalt

Steps

  1. 1

    Mince the white part of the leek, and cut the green part into round slices. Grate one of the ginger, and mince the other one.

  2. 2

    Cut the pork into very thin strips.

  3. 3

    Heat oil in a pot, and stir-fry the pork. When it starts to cook through, add the minced leek and ginger, and continue stir-frying.

  4. 4

    When fragrant, add the water and flavouring ingredients, and scoop in the tofu with a spoon.

  5. 5

    Simmer for about 15 minutes, add the grated ginger and round slices of leek, then it's done!
