Ingredients

1 hour 30 minutes
Serves 5 to 6 servings
  1. 2.2 lbsboneless beef shank (about 1 kg)
  2. 2 tablespoonsbutter (30 g)
  3. 1/4 cupbacon, diced
  4. 3 clovesgarlic
  5. 6green onion stems
  6. 3carrots
  7. Salt and pepper, to taste
  8. 1/3 cupcelery (about 50 g)
  9. 1/2 cupall-purpose flour (60 g)
  10. 1 cupred wine (240 ml)
  11. 4 1/4 cupsbeef stock (1 liter)
  12. Marjoram, thyme, and parsley, to taste
  13. 10green beans

  1. 1

    Wash the beef.

    Cut the beef into small 1-inch cubes.

    Season the beef with salt and pepper.

    In a hot pot, add the butter in cubes. Once melted, add the diced bacon.

    Add the beef shank and peeled garlic cloves to the pot.

    Cut the green onion stems and add them to the pot.

    Cut the carrots and celery into sticks and add them to the pot.

    Sprinkle the flour over the mixture and stir to combine.

    Pour in 1 cup of red wine.

    Add the beef stock.

    Tie the marjoram, thyme, and parsley together with a celery stalk and add to the pot.

    Cut half of the green beans and add them to the pot.

    Simmer for about 45 minutes, then serve.
