Clean and thoroughly wash the spinach make sure all the sand and mud are removed. Now chop it and keep it aside for all the excess water to be drained out. Now peel wash and cut the potatoes in cubes and soak it in water so that it doesn't change the colour. In a bowl soak the dried kasuri methi and keep it aside. Finely chop or crush the onions, tomatoes, ginger, garlic and green chillies. Don't make a paste of it just crush it.

You can use any oil but mustard oil goes very well with this dish. Heat the mustard oil to the smoke point and lower the flame then add the potatoes stir it and again put the flame on high. Fry the potatoes till it get a brown colour on the edges and then take it out in a bowl. In the same pan add the cumin seeds, asafoetida and crushed red chillies and saute for a minute then add the garlic and allow it to get brown then add the onions and saute it and cook it till it get transparent.

Then add the ginger and green chillies saute again then add the dry spices along withbtomatto paste and cook till the rawness goes away then add the fried potatoes and mix very well and cook till the oil oozes out. Then add the spinach and mix well when the water of the spinach start to comes out liwer the fkame and cook till completely done and all the water dried out. Then add the soaked kasuri methi mix well cook it for a min or two and off the flame. Serve it with the bread of your choice.

I served it with rice flour roti and it goes amazingly well with it. You can serve it with lachcha paratha or simple chapati and steamed rice. Make it and enjoy it with your loved ones.
