However, like everything else in this world, our favourite khichdi has also undergone a makeover to cater to the tastebuds of current generation.
Lasooni Palak Khichdi is an attempt to make the khichdi tastier and healthier. This khichdi uses spinach puree made from fresh spinach leaves blended in mixer, which makes preparation very easy.

Steps

Firstly, blanch the spinach. In a pot of boiling water, add a little salt and then spinach leaves to it. Blanch the spinach leaves for 2 to 3 minutes until wilted.
Take them out and put them in ice-cold water for 2-3 minutes.
Then drain water and transfer it in a grinding jar along with coriander leaves, mint leaves, chili, and ginger. Blend them till smooth.
Keep it ready. - 2
Wash dal and rice.
Heat ghee in a pressure cooker add in cardamom, cinnamon, bay leaf, washed dal - rice, turmeric powder, and 1tsp salt. Stir fry for 2-3 minutes or until it turn automatic. Add in 3cup water, lock the lid and cook until 2 whistles on medium flame.

Heat oil in a big Kadai, add in chopped onions and ginger-garlic paste. cook till the onion becomes translucent.
Further, add coriander powder, Cummin powder, black pepper powder, and 1/2tsp salt. Stir and cook for another 1-2 minutes. Make sure masala should not be burned, keep the flame on low.
Now add tomato paste, stir and cook till the mixture released oil. - 4
Further, add spinach paste. Mix and cook for 4-5 minutes.
Now add cooked dal - rice. - 5
Mix everything together nicely. Add 1 cup water and adjust salt. Cook till Khichdi starts boiling.
Turn off the flame.
For tempering, heat ghee in a tadka pan splattered Cummin seeds, chili, and chopped garlic. Keep the flame on low and cook until garlic turns golden, stir continuously.
Add the tempering to the Khichdi. - 6
Serve hot with roasted Papad, Curd, salad, and salted mint water. Enjoy 😊.
