Wash and soak the rice for 30 minutes

In deep pan add sufficient oil to deep fry the vegetables potatoes,cauliflower florets,makhana,cashew and raisins lightly coloured and half cooked.
Blanched the carrots and beans for 5 minutes and remove from water. - 3
Now in heat the ghee in heavy bottom pan add in all the whole spice bay leaves,black cardamom,green cardamom,star anise,caraway seeds,cloves and cinnamon allow to splutter.

Now pour 3 1/2 cup water to pan add salt,sugar,grated ginger to water cover and bring it to boil.once water boil add drained rice to pan mix once cover and cook on high heat till all the rice come up in 5 minutes.

Now add all the fried veggies,peas,blanched beans and carrots simmer the heat on low cook for another 3- 4 minutes.now add soaked saffron,makhana,barista,fried paneer and some fried raisins and cashew.

Cover and Cook for another 2-3 minutes on simmer heat.your delicious Navratan pulav is ready to serve,garnish it with remaining fried raisins,cashew,makhana,pomegranate seeds and barista, enjoy it with any kind of raita.😋
